Steak Tartare


  • 1 kg sirloin, rump or filet mignon steak
  • 1 egg yolk
  • 2 teasp Dijon mustard 
  • 1 tablesp onions, finely chopped
  • 2 tablesp olive oil
  • 2 teasp parley
  • salt and pepper


  • Trim and grind the meat twice.
  • Mix the egg yolk, onions, mustard, salt and pepper.
  • Add olive oil and beat lightly for a few seconds.
  • Add meat and parsley.
  • Season with salt and pepper.
  • Beat lightly for a few seconds.
  • Serve immediately in rounds.
