Profiteroles recipe

Profiteroles are a classic French dessert dating back to the 16th century and literally mean 'small gain'.

  • 100g butter
  • 1 cup water
  • 1 cup plain flour
  • 4 eggs
  • 250ml whipped cream
  • 100g chocolate
  • 3 tablespoons extra cream

  • Preheat the oven to 200C degrees.
  • Place butter into a pan with water, heat gently until the butter has melted and the water begins to simmer.
  • Quickly add the flour and beat well.
  • Gradually beat in the egg until glossy.
  • Pipe or spoon 20 pieces onto a baking tray and bake for 20 minutes until golden and risen.
  • Cut a slit in the side of each profiterole and return to the oven for 2 minutes to dry out then allow to cool.
  • Pipe cream into each profiterole and then arrange on a serving plate.
  • Make the chocolate sauce by placing the chocolate and cream in a bowl over a pan of simmering water until melted, then pour over profiteroles.
