   
French onion soup
The origins of this soup are unconfirmed but Lyon is the area in France most associated with onions: a la lyonnaise means dish containing onions.
Ingredients:
- 1/2kg onions
- 4 tablespoons butter
- 1 tablespoon flour
- 6 cups water
- salt and pepper
- 6 slices of french or white toasted bread
- 1 cup shredded gruyere or swiss cheese
Instructions:
- Peel onions and cut into thin slices.
- In large saucepan, melt butter and add onions then cook over medium-low heat for 10 minutes until golden brown, stirring occasionally.
- Sprinkle with flour and stir until mixture gets lightly brown then add water, salt and pepper.
- Bring to a boil over high heat and simmer for 20 minutes.
- Pour into soup bowl, place toasted bread on top and sprinkle with cheese then place under griller until cheese is bubbly and golden brown.
