French recipe for nougat


  • 2 sheets edible rice paper
  • 1 cup almonds
  • 1 cup pistachio nuts
  • 100g glacé cherries or dried cranberries
  • 1 1/3 cups white sugar
  • ¼ cup honey
  • ¼ cup liquid glucose
  • ¼ cup water
  • 1 egg white
  • Instructions:
    • Combine the sugar, honey, glucose and water in a saucepan over low heat until sugar dissolves.
    • Bring to the boil and cook for 5 minutes (or until a thermometer reaches 140-150°C).
    • Meanwhile, whisk the eggwhite with an electric mixer until firm peaks form.
    • While beaters are whisking, add the hot sugar syrup in steadily until it is incorporated.
    • Add the rest of the ingredients and stir to combine.
    • Working quickly, spoon nougat mixture into a greased square pan lined with a rice paper sheet.
    • Spread until the surface is smooth then put the other sheet on top and gently press down.
    • Set aside for 1 hour then turn out and cut into squares with a long sharp knife.
