Marquise au Chocolat


  • 300g dark cooking chocolate
  • 190g butter
  • 6 eggs (white and yolks separated)
  • 120g caster sugar


  • Melt butter, set aside
  • In a large bowl, whisk egg yolks and caster sugar.
  • In a seperate bowl whisk the egg whites until stiff
  • Melt the chocolate in a double boiler
  • Mix the chocolate with the egg yolk-sugar mixture and add the melted butter.
  • Fold in the egg whites
  • Pour the mix into moulds or a log tin.
  • Put it in the freezer til it sets.
  • Turn out onto a plate to serve, decorate as desired.
