French Toast - pain perdu (lost bread)


  • 2 cups milk
  • 1 cup castor sugar
  • 2 eggs
  • 3 1/2 oz. butter
  • 12 slices French bread (best if day old)
  • 1/2 banilla bean or 1/2 teas extract


  • Warm milk, 3/4 cup sugar and vanilla then bring to a boil, remove from heat and cool
  • Cut bread into fairly thick slices
  • Whisk eggs with the remaining 1/4 cup of sugar
  • Heat butter in a large saucepan
  • Dip each slice of bread into the milk then the eggs
  • Cook on each side until browned
  • Top or serve with sugar and cinnamon, berries or maple syrup.

Tip: If you want the whole process to go even faster, or if you are cooking for many people, you can also bake the French toast. Heat oven to 450°F and cook for 6 minutes on each side.
