   
Creme brulee
Creme brulee means 'burnt cream' and this creamy custard topped with hard caramel has been well known since the 17th century.
Ingredients:
- 4 egg yolks
- 1/4 cup sugar
- 1 cup of heavy whipping cream
- 1 teaspoon vanilla
- 4 teaspoons brown sugar
Instructions:
- Heat oven to 210 degrees C.
- Heat cream in a saucepan over medium heat until hot.
- Meanwhile, beat egg yolks and sugar until lemon colored then stir in vanilla.
- Gradually stir hot cream into egg yolk mixture then pour into small individual dishes.
- Bake for about 75 minutes after which refrigerate for at least two hours.
- Just before serving, sprinkle brown sugar over the custard and grill until sugar forms a light burned glaze.
