Creme brulee

Creme brulee means 'burnt cream' and this creamy custard topped with hard caramel has been well known since the 17th century.


  • 4 egg yolks
  • 1/4 cup sugar
  • 1 cup of heavy whipping cream
  • 1 teaspoon vanilla
  • 4 teaspoons brown sugar


  • Heat oven to 210 degrees C.
  • Heat cream in a saucepan over medium heat until hot.
  • Meanwhile, beat egg yolks and sugar until lemon colored then stir in vanilla.
  • Gradually stir hot cream into egg yolk mixture then pour into small individual dishes.
  • Bake for about 75 minutes after which refrigerate for at least two hours.
  • Just before serving, sprinkle brown sugar over the custard and grill until sugar forms a light burned glaze.
