French Christmas cookies/Sables de Noel

Ingredients:
- 3 cups of plain flour
- 1 cup of sugar
- 2 eggs
- cinnamon, salt, vanilla
- 250 g butter
Instructions:
- Combine flour, sugar, cinnamon and salt then add eggs and vanilla, mix til combined
- Add the butter gradually and mix until combined.
- Divide the dough into quarters, shape into round disc, wrap in plastic and refrigerate 8 hours.
- Roll each disc out on floured surface til 2.5mm thick then cut into shapes, star cutter ideal.
- Bake at 160 deg for 12 to 15 min.
- When done you can bundle up as gifts, ice and eat or create decorations by placing a hole in for string before cooking.
