Chicken Chasseur recipe


Chasseur means 'hunter' as the mushroom, tomato, shallots and wine/brandy sauce in the dish was originally used for cooking game.


  • 8 chicken pieces
  • 3 tablespoons butter
  • 1 tablespoons oil
  • 125 g button mushrooms
  • 2 finely diced shallots
  • 1 tablespoon plain flour
  • 2 tablespoons brandy/cognac
  • 1/2 cup white wine
  • 1 cup chicken stock
  • 1 tablespoon tomato paste
  • 1 tablespoon chopped parsley


  • Heat half of the butter with the oil and brown the chicken until golden on all sides.
  • Remove chicken and drain off the oil.
  • Add the rest of the butter, then the shallots and cook till softened.
  • Add the mushrooms and cook for three minutes.
  • Sprinkle the mushrooms with the flour and cook for one minute.
  • Stir in the cognac, white wine, stock and tomato paste then bring to boil.
  • Reduce the heat to simmer then add the chicken.
  • Cover and cook for 30 minutes.
  • Sprinkle with chopped parsley to serve.
