Brioche recipe

Ingredients:
- 1 2/3 cups plain flour
- 2 3/4 oz butter
- 2 eggs + 1 egg yolk
- 1 tbsp yeast
- 3 tbsp + 1 tsp sugar
- 1/3 cup warm milk
- 1 pinch salt
Instructions:
- Stir together the flour with the yeast and make a hole in the middle.
- Gradually pour the warm milk into the hole.
- Add the sugar and salt and then butter, piece by piece, the same with the eggs, bit by bit.
- Knead the dough until smooth then cover for two hours until it doubles in size.
- Work the dough again then place in a rectangular greased pan (alternatively you can divide the dough into 3/4 balls before placing in the pan mould).
- Cover and let the dough for another hour until it doubles in size again.
- Preheat the oven at 400 degrees F.
- Brush the brioche with the egg yolk and tsp sugar.
- Bake for 10 min then reduce the heat to 350 F and bake for 25 min.
- Remove and transfer to a wire rack to cool.
