Almond Croissants - Croissants aux Amandes


  • 6 to 8 day-old croissants
  • 1/2 cup plus 2 tablespoons sugar
  • 1 cup water
  • 1 cup almond powder
  • pinch salt
  • 100g butter
  • 2 eggs
  • 2 tablespoons sliced almonds
  • icing sugar


  • Boil water and 2 tbsp sugar, stir/simmer for a minute then transfer to shallow soup bowl to cool.
  • Combine rest sugar, almond powder and salt then add butter, mix well then add eggs and mix until creamy.
  • Dip croissants in syrup then slice and put on tray with greaseproof paper.
  • Spread inside with 2 tbsp filling and the top with another one tbsp and sprinkle with sliced almonds.
  • Bake at 180 deg for 15 minutes.
  • Dust with icing sugar.
