Aligot (French mashed potato with cheese)



  • 1 kg potatoes
  • salt and pepper
  • 4 tablespoons butter
  • 2 cups crème fraiche
  • 1 clove garlic, crushed but together
  • 3 cups grated Cantal cheese (or sharp cheddar)


  • Boil the potatoes until tender then drain and mash
  • Vigorously mix in the salt, pepper and butter for 2 to 3 minutes
  • Gently heat crème fraiche and garlic.
  • Remove the garlic and pour the crème fraiche into the potatoes
  • Cook potatoes over low heat beating the crème fraiche into potatoes.
  • Raise the heat and beat in the cheese, 1/2 cup at a time.
  • Continue beating until smooth (about 10 minutes).
