Tarte Au Flan (French custard tart)


 
Ingredients:

  • 1 1/4 cups plain flour
  • 1/8 tsp salt
  • 1/2 cup butter
  • 2-3 tbsp Iced water
  • 300 ml milk
  • 3 eggs
  • 1/2 cup sugar
  • 1/2 cup plain flour
  • 2 tsp vanilla

Instructions

  • Mix the flour and salt then butter until mixture resembles fine crumbs.
  • Add the water 1 tbsp at a time until the dough comes together as a ball.
  • Wrap the dough in cling wrap and refrigerate for 1/2 hour.
  • In a pan, heat the milk til just coming to the boil.
  • In a bowl beat the eggs with the sugar and flour.
  • Add the egg mixture in small amounts slowly to the milk while whisking continuously.
  • Add the vanilla then continue stiring while mixture thickens over low heat.
  • When nicely thickened, take off the heat.
  • Roll out the pastry to cover a greased 25cm pie dish then pour in the custard.
  • Bake for 35 min at 180 deg or until the flan is lightly coloured.
