Tarte Au Flan (French custard tart) Ingredients:
- 1 1/4 cups plain flour
- 1/8 tsp salt
- 1/2 cup butter
- 2-3 tbsp Iced water
- 300 ml milk
- 3 eggs
- 1/2 cup sugar
- 1/2 cup plain flour
- 2 tsp vanilla
Instructions
- Mix the flour and salt then butter until mixture resembles fine crumbs.
- Add the water 1 tbsp at a time until the dough comes together as a ball.
- Wrap the dough in cling wrap and refrigerate for 1/2 hour.
- In a pan, heat the milk til just coming to the boil.
- In a bowl beat the eggs with the sugar and flour.
- Add the egg mixture in small amounts slowly to the milk while whisking continuously.
- Add the vanilla then continue stiring while mixture thickens over low heat.
- When nicely thickened, take off the heat.
- Roll out the pastry to cover a greased 25cm pie dish then pour in the custard.
- Bake for 35 min at 180 deg or until the flan is lightly coloured.
