Ratatouille
 A traditional French Provencal vegetable dish that can be served as a meal on its own or with rice, potatoes, French bread or as a side dish. The name of the dish appears to derive from the French word touiller which means to mix.
Ingredients:
- 1 eggplant
- 2 zucchinis
- 1 large onion
- 2 capsicums (different colours)
- 4
tomatoes
- 2 cloves garlic crushed
- salt, pepper, provencal herbs to taste
- 2 tbsp olive oil
Instructions:
- Chop the vegetables.
- Cook the onions and garlic in the the olive oil until they begin to turn translucent.
- Add rest of ingredients then saute till lightly browned. If you want to do it the traditional French way, each vegetable should be fried separately.
- Cook covered 15 minutes or til vegetables are soft (stir occassionally).
- Crumbling goats cheese over the top when serving is a nice touch.
