Ratatouille

    

A traditional French Provencal vegetable dish that can be served as a meal on its own or with rice, potatoes, French bread or as a side dish. The name of the dish appears to derive from the French word touiller which means to mix.

Ingredients:

  • 1 eggplant
  • 2 zucchinis
  • 1 large onion
  • 2 capsicums (different colours)
  • 4 tomatoes
  • 2 cloves garlic crushed
  • salt, pepper, provencal herbs to taste
  • 2 tbsp olive oil

Instructions:

  • Chop the vegetables.
  • Cook the onions and garlic in the the olive oil until they begin to turn translucent.
  • Add rest of ingredients then saute till lightly browned. If you want to do it the traditional French way, each vegetable should be fried separately.
  • Cook covered 15 minutes or til vegetables are soft (stir occassionally).
  • Crumbling goats cheese over the top when serving is a nice touch.
