Meringues

Ingredients:

  • 3 large eggs
  • 175 g castor sugar

Instructions:

  • Separate eggs one at a time, placing each white in a cup before adding it to a whisking bowl.
  • On a slow speed whisk for about two minutes, or until bubbly.
  • Switch to a medium speed for a further minute, then whisk at high speed until stiff peaks form.
  • Whisk the sugar in on fast speed, about a tablespoon at a time, until stiff with a glossy satin sheen.
  • Pipe (or spoon) onto baking sheet lined with baking paper.
  • Place into oven at 100°C and bake for 1.5 hours.
  • Leave meringues in the oven until completely cold.
