Financier cakes
The name "financier" is said to derive from the traditional rectangular mold, which resembles a bar of gold. Another theory says that the cake became popular in the financial district of Paris surrounding La Bourse du Commerce (the former name of the Paris stock exchange). Financier pans are traditionally rectangular; however, other shapes are not uncommon. Financiers are somewhat similar to madeleines. Ingredients
- 1 cup ground almonds
- 1 2/3 cups icing sugar
- 1/2 cup plain flour
- salt
- 6 egg whites
- 3/4 cup melted butter
Instructions
- Combine the almonds, sugar, flour and salt.
- Add the egg whites and mix, then add the butter.
- Spoon the batter into buttered financier moulds.
- Bake at 180°C for 25 minutes.
- Remove from the oven and let cool in moulds for 5 minutes.
