Chicken Chasseur recipe

Chasseur means 'hunter' as the mushroom, tomato, shallots and wine/brandy sauce in the dish was originally used for cooking game. Ingredients:
- 8 chicken pieces
- 3 tablespoons butter
- 1 tablespoons oil
- 125 g button mushrooms
- 2 finely diced shallots
- 1 tablespoon plain flour
- 2 tablespoons brandy/cognac
- 1/2 cup white wine
- 1 cup chicken stock
- 1 tablespoon tomato paste
- 1 tablespoon chopped parsley
Instructions:
- Heat half of the butter with the oil and brown the chicken until golden on all sides.
- Remove chicken and drain off the oil.
- Add the rest of the butter, then the shallots and cook till softened.
- Add the mushrooms and cook for three minutes.
- Sprinkle the mushrooms with the flour and cook for one minute.
- Stir in the cognac, white wine, stock and tomato paste then bring to boil.
- Reduce the heat to simmer then add the chicken.
- Cover and cook for 30 minutes.
- Sprinkle with chopped parsley to serve.
