Aligot (French mashed potato with cheese)

Ingredients:
- 1 kg potatoes
- salt and pepper
- 4 tablespoons butter
- 2 cups crème fraiche
- 1 clove garlic, crushed but together
- 3 cups grated Cantal cheese (or sharp cheddar)
Instructions:
- Boil the potatoes until tender then drain and mash
- Vigorously mix in the salt, pepper and butter for 2 to 3 minutes
- Gently heat crème fraiche and garlic.
- Remove the garlic and pour the crème fraiche into the potatoes
- Cook potatoes over low heat beating the crème fraiche into potatoes.
- Raise the heat and beat in the cheese, 1/2 cup at a time.
- Continue beating until smooth (about 10 minutes).
